Chocolate Covered Strawberries with Pistachio’s

  This Valentine’s Day isn’t a very romantic one for my valentine and me. With a sick toddler and a tired mommy and daddy, there isn’t much time left for any Valentine’s Day celebrations.

  That’s okay though, because you know what I just so happened to have in the fridge? Some strawberries. And in my pantry? Some chocolate. You know what that means? Chocolate covered strawberries! C’mon… it’s Valentine’s Day, you knew I would. And since I love all things pistachio, I couldn’t resist adding some crunch to the chocolate.

  I am a sucker for chocolate covered fruit. Okay, chocolate covered anything. There was a chocolate fountain at my high school prom. Within two minutes of me arriving, I went over to indulge and managed to spill chocolate all over my twenty dollar dress. I guess you are supposed to put your chocolate drowned items on a plate then eat from the plate… but I decided to cut out the middle man bringing me closer to delightful chocolateness. Luckily, I only indulged in chocolate and not a few hundred dollar dress. And even better is that these chocolate covered strawberries aren’t nearly as messy. My clothes even survived any chocolate disaster.

  It is pretty self explanatory; melt your chocolate, dip your strawberries and sprinkle with chopped pistachio’s. I found this metal bowl at a thrift store for 54 cents, enabling me to reenact a double broiler. If you don’t have any such thing though, you can melt the chocolate in a sauce pan over low heat, stirring often. I used this method when making my homemade pop tart filling.

  Once the strawberries are dipped and crusted, set them on a baking sheet lined with parchment paper or wax paper. Let the chocolate set for 15 minutes then eat away. I won’t tell anyone if you eat them all in one sitting.

  Thankfully, my sweetheart isn’t into sweets. He claims he’s sweet enough, and you know what that means? More for the children and me… oh yeah!

Pistachio Crusted Chocolate Covered Strawberries

1 pint fresh strawberries, washed and dried
4 ounces semi-sweet or milk chocolate, chopped
1/4 cup chopped pistachios

  Melt chocolate in a double broiler or in a saucepan over low heat, stirring frequently. Remove from heat.

  Dip strawberries in chocolate, rotating to cover then immediately sprinkle chocolate covered portion with pistachios. Set on a baking sheet lined with parchment or wax paper. Let rest for 15-25 minutes, depending on humidity.

  Serve and enjoy! If stored in refrigerator, condensation drops may collect on chocolate.
